Weirdest combo ever: Korean fried rice, Greek lemon chicken & Bangladeshi style flat fish dopiaza :P

For me weekend is all about making dishes and filming makeup tutorial now. lol 😛 Though not every weekend I feel like doing tutorial but I never forget to try out new dishes! Few days ago, my husband’s friend gave us some Korean rice. Her grandparents had a good harvest of rice this year, so she shared some of them with her lab mates i.e friends. 🙂 It’s actually very kind of the Koreans, sharing their own harvest with people. 🙂

So, last Saturday, I though about making fried rice with Korean rice. Korean rice are kinda expensive, so we don’t usually buy them. But they have a different good taste for sure. 🙂 And the day before that, I mean Thursday, I was browsing through youtube, than I found this tutorial by Food-wish, about Greek Lemon Chicken & Potato. Seemed quite easy, yet kinda different from what you see always, so I thought I should try it too. And another fact is, I have a thing for oven baked chicken. lol :p Anyways,  few days ago I bought a fish, a Flat fish, which is very common in the marts here. So, I though of making something with it too. Thinking of what I should do, suddenly I felt like I should do it in pure Bangladeshi way. 😉 So, there comes Bangladeshi style flat fish dopiaza!

Let’s take a look of the combo, shall we? 😉

So, let’s start with Korean fried rice! The specialty of Korean rice is, it is kinda sticky. So, when you want to make fried rice with it, you need to make sure that, there’s no stickiness. The trick is, at first boil the rice with some water for 5-7 minutes and then drain off the water. While draining wash it again with cold water so, the stickiness will go away.

And here’s what you need for boiling:

  1. 3 cups Korean rice
  2. Water (as required)
  3. some yellow food color
  4. Cloves
  5. Cardamom
  6. Salt

And these are for fried rice:

  1. Butter/ Margarine
  2. Oil
  3. Carrot 1 (medium sized) (chopped in to tiny pieces)
  4. Onion 1 (large sized) (finely chopped)
  5. Egg
  6. Green pepper
  7. Salt

First boil the rice for 5-7 minutes with above mentioned ingredients. The rice won’t be cooked full this way, so it’s okay if they feel hard. Next, heat your pan with oil. You may need to put more oil, as it require usually. Add onion, carrot & egg. Later add salt and pepper. Now add the rice and put butter over it. Now cover it tightly and cook it in a low heat for 20-30 minutes. Try not to take off the lid for once while cooking. Your rice is ready and you can serve it now! ❤

Now Greek Lemon Chicken! Well this is the easiest chicken recipe you will ever try, I swear! 😛

Here’s what you need:

  1. Freshly squeezed lemon juice
  2. Oil
  3. Black pepper
  4. Rosemary (I used fresh ones, and trust me it made the chicken even more better)
  5. Salt
  6. Potato
  7. Chicken Breast
  8. Onion

I didn’t really used any measurement here. Just add however you want. Take everything in an ovenproof dish and mix everything really well. Keep it like this for 15minutes. Now bake it for 30 minutes at 180 degree Celsius. I used a halogen oven by the way. It may require more time in a convention oven.

At last, Flat Fish dopiaza. Piaz or peyaj means Onion in Bengali. So, while making fish dopiaza you need to put lots of onions. There are may ways of making this dish, I tried in my own way. Maximum Korean fishes are  sea fish, so they are very soft on the outside. When you put them in hot oil, their skins often gets scattered in the pan.  So, if you want to fry them always use some flour with spices while marinating. This creates a coating outside, and don’t let the hot oil ruin it’s skin.

  1. Red chili powder
  2. Coriander
  3. Cumin
  4. Turmeric powder
  5. Flour
  6. Salt
  7. Black pepper (very little amount)
  8. Garlic paste
  9. Ginger paste
  10. Oil
  11. Water
  12. Green chili
  13. Onions

First, clean the fish and mix it with chili-coriander-cumin-turmeric powder, flour and salt. If it feels dry, add little bit of water. Just to mix evenly. And now, heat your pan with oil and put the fish. Fry well on both sides. Take it off from oil. Now put onions and garlic-ginger pastes. After 2minutes add chili-coriander-cumin-turmeric powder, black pepper ad green chili. Add salt and some water. Now add fish. The fish, I used to make dopiaza, had laid eggs inside. Another common thing about traditional fish eating habit of Bangladesh, we eat the fish eggs too. There are even separate fish egg dishes in Bengali recipe book too. I don’t know if other countries also eat fish eggs like this, so forgive me for my ignorance. Anyways, you do not need to fry them with flour coating with the fish. Just put them while cooking with onions. Cook in a low to medium heat. After 10-15 minutes turn over both the fish and eggs and cook for another 10-15 minutes. Your dopiaza is ready!

Baked chicken roast in halogen oven

Hello everyone! I hope you guys are doing fine ^_^ I am good too, as I finished my exams and term projects yesterday! ❤

So, for exams and preparation, I was out of blogging for a week, a big big sorry for that! 😦 I had a very troubled time. Anyways, here I am again, and hoping to be regular from now. 🙂

I mentioned a lot of times that cooking is my hobby, but I don’t really post much recipes here. I am always busy with showing off my makeup skills lol :p Anyways, I will try to post recipes more often, I swear! So, today I will share with you one of my very own recipe. Couple months ago, we were visiting some friends, they treated us some roasted chicken, which tasted so good that I thought I should give it a try some day. And I did! And gosh, it tasted like heaven! ❤

Well, you just can’t deny, nothing beats the taste of home made food!

So, let’s begin!

Ingredients:

  1. Full chicken: 900grams
  2. Chili powder: 2 tbsp
  3. Turmeric powder: 1/4 tsp
  4. Coriander powder: 1 tsp
  5. Cumin powder: 1 tsp
  6. Black pepper powder: 1 tsp
  7. Yogurt: 1/2 cup
  8. Salt
  9. Soy sauce: 1 tbsp
  10. Ginger & Garlic paste: 1 tbsp
  11. Little bit of vinegar
  12. Sugar: 1/2 tsp
  13. Oil : 2 tbsp

Marinate the chicken with all of these above for 30 minutes. Preheat the oven at 180 degree Celsius. Take a flat pan suitable for your oven, put an aluminium foil first. Then put oil on the foil paper first and then put chicken. Put oil on the chicken too. Bake for 40 minutes. Remember to turn it upside down, 25-30 minutes later, so that both sides can be cooked well. I did mine on Halogen oven, so it took less time. I think in conventional oven, it will take more times and temperature.

Also, the spices-yogurt-sauce you used to marinate should create a watery paste, which you can not put with the chicken, because we are suppose to make a roast, which is something dry. So, what you can do is, make a sauce out of them! So, put your pan in the stove, and at first put some oil. Then put the mixture, and add tomato sauce, chili sauce and soy sauce, with a pinch of salt. Add sugar, cause this mixture would be really sour, so it would taste good with the sugar.

I made some potato wedges too, to serve it. So, your mill is ready! Go grab some knife, spoon and fork, and start eating!

Lunch today: Fried rice, Saucy spicy chicken & Potato chop

The main food of Bangladesh is Rice. We usually take rice two times a day. At lunch and dinner. Rice is the main dish in the meal, but we have other side dishes too. At least two side dishes containing protein sources like fish or meat and one vegetable source. We eat a lot rice, which is not very healthy anyways, but we kinda like it, you know? 😉

So, today my husband wanted some rich food for lunch. It was 2 pm then, we were already late for lunch. So, I needed to do something quick. Like I said before, I’m always in kind of hurry when it comes to food. lol :p

Fried rice is not actually bengali dish though. But I made it in a bengali way. The ingredients you need are:

  1. 1 and a 1/2 cup of cooked rice with salt
  2. Mixed vegetables: 1/2 cup
  3. Shrimp: 2 tbsp
  4. Chicken breast: 1 tbsp
  5. Olive oil 4 tbsp
  6. Egg
  7. Half cup onion cut in to pieces
  8. 1 big green pepper
  9. 2 tsp soy sauce
  10. 1 tsp ginger & garlic paste
  11. Salt as your taste

Heat the pan with oil and put everything without rice. Cook them well. And finally add rice and cook for 5-7 minutes and you are done.

This saucy spicy chicken is the easiest recipe you will ever have and hell yeah it’s tasty too! So, here’s what you need:

  1. 5-6 pieces of chicken
  2. 1 green pepper
  3. Half cup onion cut chopped in pieces
  4. 1 tbsp ginger & garlic paste
  5. 1 tsp chili powder
  6. 1/2 tsp cumin powder
  7. Quarter tsp coriander
  8.  Salt
  9. Half cup tomato sauce
  10. 2 tbsp chili sauce
  11. 4 tbsp barbecue sauce
  12. 2 tbsp soy sauce
  13. 1/2 tsp vinegar
  14. 1 tsp lemon juice

First put oil in your pan and heat it well. Then put the chicken pieces and fry them well on both sides. Then take the chickens out of the pan, and put everything else except vinegar and lemon juice. Cook them all for like 5 minutes. Now, put the chickens. Few minutes later, add lemon juice and vinegar. Cook it in a medium heat.

I’m not sure if you guys ever heard of “Chop”, which is nothing but a kebab. A really famous one in Bangladesh. To make a chop, you need some smashed potatoes, add some onions, peppers, spices and salt of course. Make small balls out of them and dip it in beaten eggs first and roll in the bread crumbs and deep fry it in oil. Making chop is really easy one. You can always add others vegetables, fish or meat in a chop. And trust me, the taste is something you will never forget! ^_^

It’s not like we bengali people always eat this kind of unhealthy food. But, it is kinda tradition of making some good food during a holiday or weekend, when every member of the family stays home. 🙂

30minutes tuna-mushroom pizza

Someday you want pizza without any reason, and most importantly without any preparation. So, what should you then? Well, follow your heart but take your brain with you, like they says! 😉

So, this a very quick recipe. And if you guys are wondering why I’m always on being quicker, it’s because after coming from lab it’s really hard for me to concentrate on anything else except sleeping and resting! That’s why I’m always in kind of hurry. But I’m a food lover too. 😦 So, I have to cook something quickly, which also needs to be delicious. Anyways, here’s how you make a 30mintues pizza.

Ingredients:

For dough:

  1. Less than 2 cups flour
  2. Warm water, as required
  3. 4 tbsp oil
  4. Salt, as your taste
  5. 1 tsp yeast
  6. pinch of baking soda
  7. 1/4 tsp baking powder
  8. Sugar 1 1/2 tbsp
  9. Lemon juice 1 tsp
  10. 1 egg

Mix them all together for 5minutes and make it a really soft dough. Cover it in a warm place for 10minutes.

For topping:

  1. 1 can tuna
  2. 50 grams mushroom
  3. Salt
  4. Pasta sauce 4 tbsp
  5. 2 tbsp chopped onion
  6. 2 green chili
  7. Half of 1 large capsicum, chopped
  8. 1 tsp chili powder
  9. 1/2 tsp coriander
  10. 1/2 tsp black pepper
  11. 1 tsp soy sauce
  12. 2 tbsp oil
  13. 2 tbsp chili sauce
  14. Pinch of sugar

Take a pan, pour the oil and heat it. At first put the onions, capsicum, green chili and mushroom. Add salt. Fry them for 3-4 minutes. Add all the spices, sauce and tuna. Cook for 4 minutes. Add sugar. And after 10minutes, turn off your stove.

Take your pizza pan. Brush them with oil or butter. Spread the dough evenly by pressing with your hands. Put the toppings over it. Spread 70 grams of shredded Cheese. And some tomato sauce. Spread the other half of capsicum. This should take 3minutes.

Now bake it for 12 minutes in a halogen oven. And, your 30minutes pizza is ready!! ^_^

Cheesy Mini Chicken Fry

When you want something of chicken and cheese and you want them very quick, this recipe is a relief for you! So, last friday I came to home from lab after 7, and I was tired as hell. But I was craving for chicken and even better, if it’s with cheese. Like I said before, I can’t have chicken or any kind of meat from everywhere, because I am a halal eater. So, I usually cook anything meat by myself in home. Anyways, that day, I made a really quick one. And I’ll share the recipe with you today:

Ingredients:

  1. 1 cup cube shaped boneless chicken
  2. Pinch of garlic powder
  3. Half tsp from each of three (chili powder + coriander powder+ black pepper)
  4. Salt as your taste
  5. half cup shredded mozzarella cheese
  6. little bit of flour
  7. Beaten egg
  8. Breadcrumb

Mix everything except egg and breadcrumb. If you fill like mixture is too dry, add little water. At the end it should be kind of sticky. Now, dip in the beaten egg and roll over in breadcrumb and deep fry them in oil. As you can see it’s so cheesy in the inside in the picture. Make some fries and enjoy!!!

 

Chicken Corn Burrito

If you want to make burrito in the simplest way and with the shortest list of item, then you are most welcome to read the following. And if you want just the perfect kind of burritos, them I’m sorry for wasting your time.  😉 😦 😒

Anyways here’s the ingredients:
1. Half cup chicken breast (cut into pieces)
2. Half cup corn (I used canned corn)
3. 1 medium sized oninon
4. 1 medium sized capsicum
5. Half tea spoon cumin
6. Half tea spoon black pepper
7. 1 tea spoon red chilli powder
8. 2 tortillas
9. Salt
10. Tomato Sauce
11. A liitle amount of ginger and garlic paste
12. Oil

Chop the onion and capsicum. Heat the pan with 3 to 4 table spoons of oil. Put the chopped onion and capsicum first and then the chicken breast, corn in the pan. Keep the pan covered for 5minutes. After that, put all the spices and the pastes. And keep it covered. After 10mintues, spread 5table spoons of tomato sauce.
Take the pan out of the stove after 3minutes. Now, take one tortilla, pour half of the filling from the pan and roll it out!

Now your burritos are ready! Make some fries, take some cucumber, and you are done! Enjoy your food now! 😉

Btw this recipe is only for two. If you want to make more, you just need to increase the proportion. 🙂
